Carbonara Recipe

Ingredients:

1/2 kilo fettuccine pasta or spaghetti
1/4 block of butter
6-8 strips of bacon chopped
1/4 cup mushroom (optional)
3-4 cloves of garlic minced
1 cup cream or 1 cup milk(evaporated milk will do) and 1 egg yolk
1/8 kilo grated Parmesan cheese (or quick melt cheese would do)
Fresh-ground pepper and Salt, to taste


Procedure:
1. Cook noodles as package directs. Drain. Place in a dry pan. Add oil (para hindi magdikitdikit at madry;) )

2. Put chopped bacon on a nonstick pan(that would do the trick, ordinary pan would do but prepared or the clean up). Cook the bacon til its crispy :naughty: set a side.

3. Using the same pan (take out the oil) melt the butter and saute the garlic and mushroom

4. Then add the cream let it simmer for 2-3 minutes then add half of the cheese :naughty: Add salt and pepper to taste. Turn off the heat once the cheese melted.
(if you'll be using milk and egg yolk instead, add the milk first in the sauce pan making it simmer for a minute or 2 while beating egg yolk lightly then add 2-3 talbespoon of the simmered milk mixture on your egg yolk this would temper the egg for it not to curdle when added to the hot mixture :naughty:. after tempering the egg add it to the mixture then half of the cheese. Add salt and pepper to taste. Turn of the heat once the cheese melted.)

5. Toss in the pasta and cooked bacon on the pan(dun sa sauce). Add the remaining cheese on top then serve.

How to Make a Garlic Paste



I will share to you how to turn minced garlic into a smooth puree for applications as pesto where you want the garlic texture to be as unobtrusive as possible.

1.Sprinkle minced garlic with a coarse salt

2.Repeatedly grad the side of a chef knife over the mixture until all the garlic turns into a smooth paste.

Easy! Try it at home..

I hate to Fried Fish

I love to eat well done fried fish.Today I fried bangus fish.I feel bad because my skin was burn as the hot cooking oil keep hitting my arms and face.I do not know the secret of frying a fish so that the oil will not hit me.lol .Guys/ Gals hope you gonna share me some tips in frying fish.

I got a Mistake

I bought Tahong in the market.I am craving of "baked tahong".When I arrived home I told cousin to cooked a baked tahong.She complain that I bought a wrong kind of cheese.I told her it is not different.The cousin told me that it was not a "melted cheese" .I believe it will melt in the oven toaster because of hot temperature as I explain.The girl did not complain to me anymore because she know that I hate complains.She keep silent and go ahead in the kitchen.After a while she is shouting that the bake tahong was burn because the cheese did not melt.I felt conscience for not listening to cousin.I handed her money to buy a melted cheese ;-)

How to Slice Egg Neatly ?

Do you love cooking? If you do,I want you to share this tips.How to slice boiled egg neatly? Slicing a hard cooked eggs can be messy.isn't it? Because the yolk tends to crumble and stick to the blade of the knife.What will you do to slice them neatly? You can apply an oil in the slicer but it will also be messy.The best way to be neat in slicing is by spraying the knife with nonstick cooking spray.Then re spray the knife blade as needed.Try it.

Home Burger Steak


Since, I could not do to update my blog daily I will share you something to remember me.
This is a Home Burger Steak recipe.If you love to cook after blogging this post is good for you.

Ingredients:
2 pc sliced bread,diced
1 tbsp evaporated milk
200g ground pork
1 pc(150 g) tokwa,chopped
1 pc small egg
1pc small onion,chopped
3 cloves garlic,minced
3 tbsp canned button mushrooms,sliced
1 pouch tomato sauce
2 tbsp frozen/cooked green peas

Procedure:
1.Combine bread and milk.Mix until bread is soggy or squashy
2.Combine with pork,tokwa,egg,onion and half of garlic
Season with 1/2 tsp iodized salt and 1/4 tsp pepper.Mix well.
3.Divide into 10 portions (about 1 1/2 tbsp each )and form into patties.
4.Pan-grill in 2 tbsp oil until brown on both sides.
Set aside
5.Saute remaining garlic and mushrooms .Add tomato sauce ,1/4 cup water ,3/4 tsp brown sugar,patis and pepper to taste.
6.Simmer over low heat for 15 minutes.
7.Add green peas and patties.Allow to simmer or boil.

Easy Baon

Try to prepare your Baon easily.I will share one recipe to prepare baon

Stir-Fried TOFU with Oyster Sauce

Ingredients:
250g. tofu,sliced into bite pieces
2 tbsp. oil
1 clove garlic,crushed
1 tsp. ginger,cut into small strips
1 tbsp oyster sauce
1 tbsp soy sauce
1tsp sugar
4 pcs oyster,mushroom,quartered
1 stalk spring onion,cut into pieces
1 baby bok choy ( or pechay ),quartered
cilantro leaves

Steps :
1.Heat a wok over a medium heat
2.Once wok is hot,add oil and saute the tofu until they are golden brown on all sides
3.Make sure you move them around gently to keep them from sticking to the pan or breaking
4.Add the garlic , ginger ,oyster sauce ,soy sauce and sugar.
5.Toss until well combined
6.Put in the oyster mushroom,spring onion and bok choy
7.Simmer until the sauce has reduced a little and the spring onions have slightly softened
8.Garnish with cilantro leaves

Serve!

How to Make Carrot Spread?

I have already posted about carrot juice in previous pages.Didn't know that you can make a carrot spread too?I will share "how to make carrot spread" to complete your snack at home.
Here it is :
Ingredients:
1 cup carrots,grated
2 eggs,hard boiled and mashed
6 tbsp mayonnaise
1tbsp lemon juice
2 tbsp onion ,grated

Steps:
1.Mix all ingredients in a blender
2.Store in an airtight container
3.Chill before serving either as a spread or dip.

Easy! you can also do this at home and try to taste the real carrot spread!

Holiday Menu

This is my first time to cook an afritada.I had afritada mix for quick and easy cooking.But, next time I will try a real afritada recipe.
This is our menu in lunch plus spaghetti and my favorite cake :-)



















Ingredients:

3/4 pork
1 pack afritada mix
2 cups water
bell pepper
potato

Here is what I did ;
1.Heat the oil in the frying fan.Place the pork until slightly brown
2.Remove the excess oil
3.Add the two cups water
4.Add afritada mix until it dissolve.
5.Cook until the meat tender
6.Add the slice potato and Bell pepper
7.when all is nice and soft.Place a chopped onion

Grilled Meat








My day off fall last saturday and we are complete in the house.So,I buy a fish and cut liempo in a meatshop for our lunch.My 'inihaw ' / grilled meat was everybody's favorite now.Here is what I have done:

Ingredients:
1 kg pork liempo
1 cup coconut vinegar
1 tbsp iodized salt and white sugar
3 tbsps.freshly ground black pepper
1/4 tbsp. baking soda
2tbsp minced garlic
1 tbsp patis

What to do:
Combine all ingredients in a mixing bowl and marinate pork for 2 hours or overnight in the refrigerator.Drain and grill over the live charcoal.
